In the mean time, I made some Apple and Raisin Muffins from a recipe I found at Recipeland and they are so yummy!!! I made some little changes and I also used round baking pans instead of muffin pans.
Here is the recipe:
1.5 cups of unbleached all-purpose flour
1 tspn Baking soda
1 tspn Cinnamon
1/4 tspn all natural sea salt
2 egg whites
3/4 cups white sugar
1 tspn Vanilla extract
1 can Comstock apple filling (I chopped them up into little pieces)
3/4 cups raisins
2 Tbspn organic honey
- Preheat oven to 350 F degrees
- Prepare baking pans with cooking spray or butter and flour
- Combine egg whites, sugar, apple filling, vanilla extract, honey and raisins in a mixing bowl
- Combine flour, baking soda, cinnamon and salt in another mixing bowl
- Mix dry ingredients with wet ingredients until moist and then put in your baking pans
- Bake 20 to 30 mins until it is lightly browned and when you stick a toothpick in the middle it comes out clean
